This week we are featuring
Roxann Moriston with Papa's Smok'in Meat


Q & A Time featuring Roxann:

How long have you been in business? Our company has been in business about 7 years.

What is your business all about? My husband started smoking meat for a hobby. I remember so well the first few dishes he prepared. They were NOT good. Keith was determined though. He worked hard to get it down, watching videos, reading books, and practice, practice, practice. Once he caught on, it was all downhill after that. I was apprehensive at first, but wanted to support him, so he built his first concession trailer and the customers came!  Now we have two concession trailers and we also do catering. Keith does the smoking and I make the sides.

What makes your business unique?  There are quite a few Smoked Meat businesses around. Ours is unique because we smoke our meat the old way. We do not have buttons we push. Keith actually builds his own smokers and has to watch them until they are done, adjusting the heat and adding wood manually. 

What would you say are the top three skills needed to be a successful business owner?

To be a business owner you have to

1. Like people. We love our customers and we love talking to them and seeing them smile when they eat our food.

2. You have to be honest. Customers can tell when you are not honest with them and that word gets around very fast. If you have done something wrong, admit it and do what it takes to make it better.

3. Being Committed is very important in owning a business. Not everyone feels 100% all the time but when you are in business you can't just take the day off. You are responsible for that business and if you are going to be successful, you need to be available.

What three pieces of advice would you give to someone who wants to launch their own business? 

If you are thinking of starting a business, you need to ask yourself a few questions.

1. Are you ready to work hard, very hard?  Getting a business to succeed is hard work and sometimes very time consuming. Sometimes you need to put your personal life aside.

2. Do you have the finances available? Starting a business sometimes has hidden costs. Be aware of what they are before you start. Insurance, Building issues, Advertising, they all add up. Check out your legal status. Sales tax, employees, licenses, etc. It is easier to find out about these ahead of time so you are not surprised once your have your business established.

3. Make a Business Plan!

How do you conquer those moments of doubt that so often stifle or trip up or stop so many? 

My husband and I work so well together. We have our squabbles, but when it comes down to it, we are both committed to the business and what is right. When one of us is down, we talk about it and really have the ability to pick each other up. Being in business together is no different than our marriage. Communication is the key. We have been married 43 years.

Keith and I really do enjoy what we do. We would not do it if we didn't. We look forward to working in the concession stands and we love all the great feedback we get from the catering jobs we do. We know our food is good and we just can't wait for people to take that first bite.
